I honestly do not know how Craig does it. He draws inspiration from all sorts of places, adds his own twist and comes up with something simple and sublime- and that is what he has done with this recipe. It is somehow fruity and fresh, as well as sweet and salty, and yet retains the essence of this well-loved classic.

Don't just stick with chicken though. Try it on vegetables, potatoes, pork- anything you like!
